Smelling Sofrito: How the base ingredient for Puerto Rican food makes me feel like I belong

My Aunt Ida’s Puerto Rican Sofrito Recipie

(1) Red Onion

(1) Yellow Onion

(1) White Onion

(1) Red pepper

(1) Green Pepper

(1) Orange Pepper

(2) bunches cilantro

3-5 Leaves culantro (otherwise known as “saw tooth coriander” or “ngò gai”)

(3)Aji dulce (sweet peppers; not habanero or scotch bonnets)

12-15 Cloves of garlic

METHOD: Slowly Add all ingredients to a food processor or good blender. Rough chop like a chunky salsa. Be careful not to puree. Freeze in ice cube trays and use as needed. This will only be fresh in the fridge for a few days.
